One pot meals that are easy and healthy.
KP’S Jollof Rice for Vegans & Vegetarians
  • 2 – 3 Tablespoons oil of choice

  • 2 cups of any KP’s Jollof Rice

  • 3 cups Vegetable stock or water

  • Basil, bay leaf, rosemary or spice of choice.

  • 1 small onion (optional) sauté in oil before adding rice if you plan to use it.

  • 1 cup mixed vegetable

  • Add vegetable oil of choice (2-4 tablespoons) in a medium size pot.

  • Add KP’s Jollof rice, stir it all for 1-3 mins to ensure that all the grains are coated with the oil.

  • Add 2 cups of vegetable stock or water to sautéed KP’s Jollof Rice, stirring to evenly distribute the rice

  • Cover for 10 minutes. Reduce the heat to allow to cook for 20-25 minutes.

  • Add the vegetables of choice and stir evenly.

  • Let it stand for 5 minutes, fluff with fork before serving. 

  • Makes 8 servings and can be served with mixed vegetables.

KP’S Easy n’ Tasty Jollof Rice for Meat and Seafood Lovers

Makes 8 servings and can be served with grilled chicken, roasted lamb, baked fish, or stew.

  • 2 – 4 tablespoons oil of choice

  • 2 cups of any KP’s Jollof Rice

  • 2 cups beef or chicken stock or water

  • Basil, bay leaf, rosemary or spice of choice.

  • 1 small onion (optional) sauté in oil before adding rice if you plan to use it.

  • 1 lb beef, chicken, sausage or smoked turkey

  • Add vegetable oil in a medium size pot.

  • Add KP’s Jollof Rice and sauté for 1-3 mins to ensure that all the grains are coated with the oil.

  • Add the stock or water to the sautéed KP’s Jollof Rice, stirring to evenly distribute the rice.

  • Add spices.***

  • Add the sauteed onion (optional)

  • Add the beef, chicken, sausage or smoked turkey and boil until tender. 

  • Cover for 10 minutes. Then reduce the heat and allow it to cook for another 20-25 minutes.

  • Let it stand for 5 minutes, fluff with fork before serving. 

*** Please, you may add other spices of choice but do not any more tomato stew.
