KP’S Jollof rice for Vegans & Vegetarians.

This is a one pot meal that is easy and healthy.

KP’s Jollof Rice with mixed vegetables

  1. 2 – 3 Tablespoons oil of choice

  2. 2 cups of KP’s jollof rice

  3. 3 cups Vegetable stock or water

  4. Basil, bay leaf or rosemary or spice of choice.

  5. 1 small onion (optional) sauté in oil before adding rice if you plan to use it.

  6. 1 cup mixed vegetable

Directions:

  1. Add vegetable oil of choice (2-4 tablespoons) in a medium size pot.

  2. Add KP’s Jollof rice, stir it all for 1-3 mins to ensure that all the grains are coated with the oil.

  3. Add 2 cups of vegetable stock or water to sautéed KP’s Jollof Rice, stirring to evenly distribute the rice

  4. Cover for 10 minutes. Reduce the heat to allow to cook for 20-25 minutes.

  5. Add the vegetables of choice and stir evenly.

  6. Let it stand for 5 minutes, fluff with fork before serving. 

  7. Makes 8 servings and can be served with mixed vegetables.

KP’S Easy n’ Tasty Jollof Rice-Meat/Seafood lovers

This is a one pot meal that is easy and healthy. KP’s Jollof Rice with meat/poultry/seafood or smoked turkey.

Directions:

  1. Add vegetable oil of choice (2-4 tablespoons) in a medium size pot.

  2. Add KP’s Jollof rice, stir it all for 1-3 mins to ensure that all the grains are coated with the oil.

  3. Add 2 cups of beef/chicken stock or water to sautéed KP’s Jollof Rice, stirring to evenly distribute the rice

  4. Basil, bay leaf or rosemary or spice of choice.

  5. 1 small onion (optional) sauté in oil before adding rice if you plan to use it.

  6. 1 LB of Beef/Chicken/Sausage or Smoked Turkey (boiled to tender)

  7. Add 2 cups of stock (of the boiled meet/chicken/sausage or smoked turkey) or water to sautéed KP’s Jollof Rice, stirring to evenly distribute the rice

  8. Cover for 10 minutes. Reduce the heat to allow to cook for 20-25 minutes.

  9. Add the meat/seafood of choice and stir evenly.

  10. Let it stand for 5 minutes, fluff with fork before serving. 

  11. Makes 8 servings and can be served with grilled chicken, roasted lamb, baked fish, or stew.

*** Please, you may add other spices of choice but do not any more tomato stew.
